Printed reports, theses, and legal submissions almost always need page numbers, and a PDF exported from a design tool or a scanner rarely has them. Adding them afterwards takes seconds and saves rebuilding the whole document.
Worth knowing: Numbering can start on any page, so covers and title pages stay clean while the numbering still begins at 1 on the page you choose.

Yes. Set "Start numbering on page" to 2 and the first page is left blank. Numbering still begins at 1 on page 2 unless you change the first number shown.
Yes. "First number shown" lets you start anywhere, which is useful when this PDF continues on from another document.
Yes. You can number with digits (1, 2, 3), small roman numerals (i, ii, iii), capital roman numerals (I, II, III), or letters (A, B, C). Roman numerals are common for front matter such as a preface.
It counts the pages that actually get a number. If you skip a cover page in a 11 page document, the numbering reads 1 of 10 rather than 1 of 11.
They are drawn on top of the page, so if your pages already have content near the edges, increase the distance from the edge before running it.
